Honey Chipotle Chicken
Description
Start by seasoning chicken with olive oil, salt, pepper, garlic powder, and half the chipotle powder, massaging the spices to infuse flavor and maintain juiciness. Cook the chicken over medium heat in a hot skillet without overcrowding, allowing 5 to 6 minutes per side for even cooking and a slight char.
Meanwhile, prepare a glaze combining lime juice, honey, and the remaining chipotle powder to lend a sweet, tangy, and spicy contrast. Once cooked, brush the chicken with this glaze to add shine and additional flavor notes.
This honey chipotle chicken pairs well with vegetables, mashed potatoes, rice, quinoa, or as a topping for salads. Its robust flavors make it a straightforward yet flavorful protein option adaptable to diverse side dishes.
Ingredients
- 4 chicken breast or chicken tenderloins, boneless skinless
- salt to taste
- black pepper to taste
- extra virgin olive oil
- garlic powder
- lime juice of 1
- 2 Tablespoon honey
- 2 Tablespoon chipotle powder divided (1 Tbsp for sauce & 1 Tbsp for rubbing into chicken, McCormick Grill Mates seasoning
Instructions
- Heat oil in a large skillet over high heat.
- Rub the chicken with olive oil, season with salt, freshly ground black pepper, garlic powder, and 1 Tbsp Chipotle powder seasoning. I like to rub the chicken with a little bit of olive oil because it helps keep all the juices in the chicken and the chicken stays tender & juicy.
- Reduce heat to medium and place chicken in skillet. Do not overcrowd the skillet. Work in batches if necessary. Cook chicken over medium heat for about 5 - 6 minutes on each side.
- While chicken is cooking, mix the juice of 1 lime, honey, and the other 1 Tbsp chipotle powder seasoning.
- After chicken is done, place it on a plate and brush with the honey chipotle mixture. You can serve it with your favorite side of vegetables, over mashed potatoes, rice, quinoa or top a big green salad.
