Honey Chipotle Chicken
Description
This recipe combines minced chipotle peppers in adobo sauce with honey, lime juice, garlic, and salt to create a marinade that delivers a smoky spiciness balanced by sweetness and citrus acidity. Chicken thighs are coated evenly in this marinade and allowed to infuse flavor for at least 30 minutes, up to a full day refrigerated for deeper taste.
Cooked in a hot skillet with cooking oil, the chicken thighs are first seared on one side until the released moisture evaporates and the marinade reduces to a glaze that coats the meat with a sticky finish. Flipped and cooked through on the other side, the thighs develop caramelized edges without drying out due to their naturally higher fat content.
Sliced green onions added atop provide a fresh contrast that brightens the rich and flavorful chicken. This dish suits casual dinners and pairs well with rice, roasted vegetables, or simple sides.
Ingredients
- 3 chipotle peppers in adobo sauce $0.30
- 2 Tbsp honey $0.54
- 2 Tbsp lime juice $0.59, about one lime
- 1 clove garlic $0.08, minced
- 1/2 tsp salt $0.02
- 2 Tbsp cooking oil $0.08, divided
- 6 chicken thighs $6.78, boneless, skinless
- 2 green onions $0.22, sliced; optional
Instructions
- Mince the chipotle peppers. Combine the minced peppers in a bowl with the honey, lime juice, minced garlic, salt, and 1 Tbsp cooking oil.
- Place the chicken thighs in a shallow dish and pour the marinade over top. Toss the chicken in the marinade until evenly coated.
- Marinate the chicken for a minimum of 30 minutes, up to one day. If marinating longer than one hour, refrigerate the chicken as it marinates.
- When ready to cook the chicken, heat a large skillet over medium. Once hot, add the remaining 1 Tbsp cooking oil and swirl to coat the surface of the skillet.
- Add the marinated chicken to the skillet and cook on one side until the water released by the chicken evaporates, the marinade has reduced to a glaze, and the chicken has browned. Flip the chicken over and cook on the second side until browned and cooked through.
- Top with sliced green onions and serve.
