Honey Chipotle Lime Chicken Bowls

Honey Chipotle Lime Chicken Bowls highlight thin-cut chicken breasts marinated in a mixture of olive oil, lime juice, honey, chipotle peppers with adobo sauce, Dijon mustard, garlic, and fresh cilantro. The marinade imparts a balance of sweet, smoky, and tangy flavors with a mild heat from the chipotles. After marinating, the chicken is cooked until tender and sliced, to be served atop a bowl of ingredients like spinach, tomatoes, avocado, cilantro lime rice, and cilantro lime dressing, making a customizable and flavorful meal.

Description

This recipe focuses on thin-cut, boneless, skinless chicken breasts marinated in a combination of honey, fresh lime juice, chipotle peppers in adobo sauce, Dijon mustard, garlic, cilantro, salt, and pepper, mixed with olive oil. The marinade is designed to infuse the chicken with smoky, sweet, and citrusy notes while tenderizing it. The chicken benefits from a minimum marinade time of 2 hours up to 24 hours for enhanced flavor. It can be grilled, pan-cooked, or broiled to a cooked-through state and rested before slicing.

The sliced chicken is then combined with bowl ingredients such as leafy greens (spinach, lettuce, or spring mix), fresh tomatoes, avocado slices, and cilantro lime rice. The accompanying cilantro lime dressing complements the smoky, sweet chicken with fresh herb and citrus notes. Together, these components create a balanced meal with varied textures and fresh flavors.

For preparation, chipotle peppers with adobo sauce contribute both heat and smoky flavor, with the recipe suggesting about 2 tablespoons of mainly sauce for a mild spice level. Thin-cut chicken breasts are preferred for even cooking and better absorption of the marinade; thicker cuts should be sliced in half horizontally. Nutrition information applies only to the prepared chicken portion, excluding bowl ingredients.

Ingredients

Servings

Honey Chipotle Lime Chicken:

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoon honey
  • 2 tablespoons chipotle peppers mostly sauce if you can, finely chopped, with adobo sauce
  • 1 tablespoon Dijon mustard
  • 4 to 5 to 5 cloves garlic finely minced
  • 2 to 3 to 3 tablespoons cilantro chopped, fresh
  • ½ teaspoon salt I use coarse, kosher salt
  • Pinch black pepper
  • 2 pounds chicken breast thin cut, boneless, skinless

Bowls:

  • spinach lettuce or spring mix
  • tomato chopped
  • avocado chopped or sliced
  • lime fresh
  • rice with cilantro and lime
  • cilantro lime dressing

Instructions

  1. For the marinade, whisk together the olive oil, lime juice, honey, chipotle peppers and sauce, Dijon mustard, garlic, cilantro, salt and pepper.
  2. Place the chicken in a shallow dish or ziploc bag and pour the marinade over the top. Make sure the chicken is evenly coated. Cover and refrigerate for 2 to 24 hours (the flavor gets better the longer it marinades).
  3. Cook the chicken on a grill, in a skillet or in the oven (broiled) until cooked through, probably 4-5 minutes per side, depending on how it's cooked. Let rest for 5-10 minutes.
  4. Slice the chicken into strips and serve with any or all of the bowl ingredients. Cilantro lime dressing not optional. :)

Notes

  • Use about 2 tablespoons of chipotle peppers with adobo sauce for mild spiciness, adjusting to taste.
  • Thin-cut chicken breasts work best for even marinating and cooking; slice thicker breasts horizontally to match thickness.
  • Nutrition facts cover only the marinated and cooked chicken, not the bowl additions.
