Honey Cornmeal Pancakes with Bacon
Description
This recipe mixes cornmeal, flour, and baking soda with wet ingredients including beaten egg, buttermilk, vanilla, and honey to create a slightly textured batter. Pancakes are scooped in quarter-cup portions and cooked on the griddle to a golden finish. The addition of cornmeal provides a subtle grainy texture and a hint of sweetness distinct from traditional pancakes.
The cooked, diced bacon adds saltiness and crispness as a topping, complementing the pancakes’ soft crumb. A warm sauce of melted butter blended with honey or a drizzle of maple syrup enhances the overall flavor and moistness, creating a balance between sweet and savory.
This breakfast dish is suitable for a weekend breakfast or brunch, offering a comforting mix of textures and tastes. It can be served with extra syrup or fruit as desired.
