Honey Dijon Dressing
Description
This dressing combines acidity from apple cider vinegar and lemon juice with the sharpness of Dijon mustard and the sweetness of honey to create a bright, flavorful sauce. Minced garlic and fresh ginger add aromatic pungency and subtle heat, while olive oil rounds out the flavor with richness. Salt balances and enhances all components. Shaking the ingredients in a jar ensures a well-emulsified and pourable dressing.
The dressing can complement leafy green salads, vegetable bowls, or act as a dip for snacks. The recipe allows slight modifications, like adding more honey for sweetness or more mustard for tang. It stores refrigerated up to five days and may thicken when cold but loosens quickly with warming.
A creamy variation uses Greek yogurt added to the mix, turning it into a dip good for pretzels or chicken nuggets. The recipe was updated to enhance flavor balance in 2023 but an earlier version includes slightly more mustard.
Ingredients
- ¼ cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 2 tablespoons honey
- 1 garlic minced, clove
- ½ inch ginger minced, fresh
- ¼ teaspoon salt fine sea salt
Instructions
- In a 12-ounce mason jar, combine the olive oil, vinegar, mustard, lemon juice, honey, garlic, ginger, and salt. Use a spoon to stir until well mixed, or secure the lid on the jar and shake well.
- Taste the dressing and make any adjustments, as needed. For a sweeter dressing, add more honey, and for a more tangy dressing, add a little more Dijon mustard.
- Secure the lid on the jar and store it in the fridge until you're ready to use it. It will keep well for up to 5 days when chilled. This dressing may thicken when cold, but it will become runny again if you let it come to room temperature again. Run the sealed jar under warm tap water to speed the process if you're in a hurry.
Notes
- The nutritional estimate corresponds to about 2 tablespoons of dressing serving size.
- For a creamy dip, add 1/4 cup plain Greek yogurt and mix well.
- Store the dressing refrigerated for up to 5 days; it may thicken when cold but loosens when warmed to room temperature.
- Adjust honey or Dijon mustard amounts to taste for sweeter or tangier dressing variants.
- This recipe was updated in October 2023 for improved flavor balance; the original had more mustard.
