Ingredients
- 1 ½ pounds chicken thigh boneless, skinless
- 2 tablespoons olive oil divided
- 3 garlic whole cloves

- black pepper to taste
- 3 teaspoons garlic minced
- ¼ cup honey
- 3 tablespoons Dijon mustard stone ground
- green onion or fresh parsley; for garnish
Instructions
- In a medium-sized skillet over medium heat, add half of the 2 tablespoons olive oil, and 3 whole garlic cloves.
- Season the 1 ½ pounds boneless skinless chicken thighs with salt and pepper to taste, and cook for 3-4 minutes on each side until fully cooked. Remove and set aside.
- Add the remaining olive oil and 3 teaspoons minced garlic. Cook for 1-2 minutes until tender, and ¼ cup honey and 3 tablespoons stone ground dijon mustard. Add the chicken back to the pan and heat for a couple of minutes more.
- Garnish with green onions or fresh parsley for garnish and serve.
