Honey Garlic Chicken Potato Foil Packets
Description
Honey Garlic Chicken Potato Foil Packets showcase stacked layers of marinated chicken breast and seasoned vegetables wrapped tightly in foil to cook evenly over a grill or campfire. The marinade blends honey, apple cider vinegar, soy sauce, garlic, and parsley to create a rich, slightly tangy coating that caramelizes on the chicken while infusing the potatoes and asparagus. Butter slices atop the chicken add richness and encourage browning inside the pouch. Baking in foil traps steam that gently cooks the vegetables until tender without drying the chicken.
The baby red potatoes are quartered to a size that cooks through along with the chicken breast, while the asparagus is trimmed and halved to stay crisp-tender rather than mushy. Salt and pepper season the packet contents with simplicity, though the notes suggest alternative seasoning blends as options. This technique helps concentrate flavors and keeps cleanup minimal.
When serving, allow the packets to rest briefly after cooking to finish resting the meat and avoid steam burns upon opening. These meal packets pair well with direct-from-the-grill sides or fresh bread. They also work well for portable outdoor meals since each packet holds one chicken breast and a portion of vegetables marinated together.
Practical tips include not overfilling the packets to ensure even cooking and accommodating thinner asparagus by cooking it separately to prevent overcooking. Oven baking can substitute the grill method with adjusted times. Using fresh minced garlic enhances the marinade depth, and alternative seasonings can bring variation. Internal temperature checking is essential to ensure safe doneness.
Ingredients
Marinade
- 1/2 cup honey
- 2 tablespoons apple cider vinegar
- 2 tablespoons soy sauce
- 2 tablespoons garlic minced
- 1 teaspoon parsley
Packet Ingredients
- 2 pounds chicken breast about 4 chicken breasts
- 2 tablespoon butter
- salt
- black pepper
- 1 pound asparagus
- 1 1/2 pound red potatoes quartered, baby
Instructions
- In a bowl whisk the honey, apple cider vinegar, soy sauce, garlic parsley. Place the chicken in the marinade for at least 30 minutes.
- Trim the woody part off the asparagus, then cut the asparagus pieces in half. Slice the potatoes into quarters.
- Place two large sqaure pieces of foil on top of each other, one for each chciken breast. Place a chicken breast on top of the foil. Slice the butter into pieces and add it on top of the chicken breasts. Sprinkle with salt and pepper.
- Place potatoes and asparagus around the chicken splitting them evenely between the chicken.. Pour marinade over chicken and vegetables. roll the edges of the foil pouch up to close.
- Place the pouches on the grill or campfire for 20-30 minutes or until the chicken reaches an internal temperature of 165 degrees. Potatoes should be tender, and the chicken should be cooked all the way through. Let cool for a few minutes, then enjoy!
Notes
- Do not overfill foil packets; divide ingredients between more packets if needed for even cooking.
- For thin asparagus, cook separately in foil for less time to avoid overcooking; add marinade for flavor.
- Fresh minced garlic can be used instead of pre-minced garlic for stronger flavor in the marinade.
- Alternative seasonings like all-purpose blends can replace salt and pepper for a different taste.
- The packets can be baked in a 375°F oven for 20-25 minutes, checking chicken reaches 165°F internal temperature and potatoes are tender.
