Honey Garlic Chicken Recipe
Description
The recipe involves coating chicken drumsticks with a mixture of melted butter, honey, Dijon mustard, garlic powder, salt, and pepper. Arranged on a foil-lined pan, the chicken bakes in a moderate oven for about an hour, with basting every 15 minutes to develop a caramelized, glossy crust without burning.
Using skin-on chicken enhances texture with a crispy skin while locking in juices. The balance of sweet honey and tangy mustard combined with garlic seasoning creates a flavorful glaze. The chicken is cooked fully to an internal temperature of 165°F. If the chicken darkens too quickly, covering with foil or repositioning helps prevent burning.
Leftovers can be refrigerated for several days or frozen for longer storage, reheated gently to maintain moisture. This preparation suits casual dinners or meal prep due to its straightforward approach and flavorful results.
Ingredients
- 10 chicken drumstick 4 ounces each, skin-on
- 2 tablespoons butter melted
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 1 teaspoon kosher salt or ½ teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
- ¼ teaspoon black pepper
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F. Line a large, rimmed baking sheet with foil (to save you some serious cleanup later as the honey caramelizes) and grease the foil.
- Arrange the drumsticks in the pan. Whisk together the melted butter, honey, mustard, salt, black pepper, and garlic powder.
- Evenly pour the mixture over the chicken, brushing all over to coat.
- Bake, basting with a clean pastry brush every 15 minutes, until the chicken is browned and cooked through and the juices run clear. In my old oven, it took 75 minutes. In the new one, which I believe is more accurate, it takes 60 minutes. The chicken should reach an internal temperature of 165°F as measured by an instant-read thermometer, not touching the bone.
- Baste the chicken one last time and serve.
Notes
- Use skin-on chicken for crispy texture; skinless can be used but may reduce crispiness.
- If using bone-in thighs or leg quarters, increase cooking time by 10–15 minutes and cover with foil if browning excessively.
- Check chicken doneness with an instant-read thermometer, aiming for 165°F internal temperature not touching bone.
- Basting every 15 minutes preserves juiciness and prevents glaze from burning on the pan.
- If some pieces brown too quickly, cover those with foil and reposition in the pan to ensure even cooking.
- Store leftovers in airtight containers in the fridge for 3–4 days or freeze up to three months.
- Reheat covered in the microwave at 50% power or in a 350°F oven until warmed through; leftovers can also be eaten cold.
