  • 4 carrot cut into ½ inch pieces, large
  • 1 tablespoons butter unsalted
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt fine sea salt
  • 1 tablespoon honey

Instructions

  1. Heat 1-2 inches of water in a medium saucepan. When at a low simmer, add carrots.
  2. Simmer for 5 minutes, or until soft. Drain well and add back to warm saucepan, keeping off heat.
  3. Add butter, cinnamon, nutmeg, fine sea salt and honey. Mix until coated, serve immediately. The residual heat from the pan should be enough to melt butter and honey, but if now, put on low heat until just combined.
