Honey Glazed Ham
Description
This recipe involves preparing a syrupy glaze by simmering butter, brown sugar, honey, Dijon mustard, and aromatic spices. The glaze is poured over a ham, which is first baked covered to gently heat through and allow the flavors to soak in. After two hours, the ham is uncovered, glazed again, and baked at a higher temperature to caramelize the sugars and create a glossy, richly flavored crust.
The spice blend of cinnamon, nutmeg, cloves, and allspice gives the glaze depth and warmth, while the honey adds sweetness and shine. The bone-in spiral cut ham ensures even heat distribution and easier slicing. This method yields juicy, flavorful slices with a sweet-savory crust.
Honey Glazed Ham is often served at holidays or large gatherings and pairs well with fresh herbs and fruit garnish for contrast. Spoon pan drippings over the meat to preserve moisture and richness during serving.
Adjust brown sugar type to modify molasses notes as preferred. The glaze is best prepared fresh before use, as it thickens if refrigerated. If hardened, it can be gently reheated in the microwave. Alternative ham cuts like bone-in half shank can be used with scoring to allow flavor penetration.
Ingredients
- 8 lb ham bone-in, spiral cut
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 cup honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon cinnamon
- nutmeg pinch
- cloves pinch
- allspice pinch
- cooking spray
- herbs optional, fresh, for garnish
- Fruit optional, fresh, for garnish
Instructions
- Preheat the oven to 350 degrees F. Coat a baking pan with cooking spray.
- Add the butter, brown sugar, honey, mustard, cinnamon, nutmeg, cloves and allspice to a pan. Place the pan over medium heat.
- Bring the pan to a simmer and cook for 3-5 minutes or until glaze is syrupy.
- Place the ham in the pan and pour half of the glaze over it. Cover the ham tightly with foil. Reserve the other half of the glaze for later use.
- Bake the ham for 2 hours. Uncover the ham.
- Pour the remaining half of the glaze over the ham. If the glaze has started to harden, you can microwave it for 30 seconds to loosen it back up.
- Increase the oven temperature to 400 degrees F.
- Place the ham, uncovered, in the oven. Bake for another 15-20 minutes or until glaze is caramelized and browned.
- Transfer the ham to a serving platter and garnish with fresh herbs and fruit. Spoon pan drippings over the ham. Slice the ham, then serve immediately.
Notes
- Using a bone-in spiral cut ham allows for even cooking and easy slicing; alternatively, a bone-in half shank can be scored for glaze absorption.
- Light brown sugar offers a milder sweetness; for more molasses flavor, use dark brown sugar.
- Various honey types, such as clover or wildflower, can be used; clover is the usual choice.
- Prepare the glaze just before application as it hardens if refrigerated; reheat thickened glaze in the microwave for about 30 seconds to loosen it.
