Honey Ham

Honey Ham is a slow-baked bone-in smoked ham coated with a honey, brown sugar, and whole-grain mustard glaze. The initial low-temperature bake renders the meat tender, while the final high-temperature glazing caramelizes the coating for flavor and color. This recipe uses a foil wrapping technique to keep moisture and reduce sticky leaks in the oven. Brushing the glaze repeatedly builds a layered sweetness and creates a glossy finish.

Description

This Honey Ham recipe starts with an 8.5-pound bone-in smoked ham baked at 350°F wrapped tightly in foil to prevent leaks from the sticky glaze. After two hours, the ham is unwrapped partially and brushed with a warm mixture of honey, brown sugar, mustard, and butter. The oven temperature is increased to 425°F to caramelize the glaze over the next hour, with frequent reapplications every 15 minutes to develop flavor and appearance. The glaze balance of sweetness and tang from the whole-grain mustard complements the smoky richness of the ham. The cooking times suggested correspond to the size of the ham, and internal temperature monitoring ensures proper doneness. This ham can be a centerpiece for festive meals or family dinners.

Ingredients

Servings
  • 8.5 lb. ham bone-in, smoked
  • 1 cup honey
  • ¼ cup whole grain mustard
  • ¼ cup dark brown sugar
  • ¼ cup butter unsalted

Instructions

  1. Preheat the oven to 350°F.
  2. Line a roasting pan or a large rimmed sheet pan with three layers of aluminum foil. This will be used to wrap the ham and hopefully prevent leaks.
  3. Place the ham face down on the prepared pan. Cover completely with the foil. You may do this loosely, but you need to ensure the bottom and sides are sealed well so it does not leak because the sauce is very sticky.
  4. Bake the wrapped ham for 120 minutes (or 2 hours).
  5. Make the glaze in a saucepan. Combine the mustard, sugar and butter. Heat over medium-low heat until combined, then stir in the honey. Turn off the heat, and let sit for 10 minutes.
  6. When the ham has finished its first bake, take it out of the oven and unwrap the top half of it.
  7. Turn up the heat of the oven to 425°F.
  8. Brush the glaze over the uncovered ham, and place in the oven to bake for an additional hour (to 1.25 hours). Every 15 minutes, open the oven and liberally coat the ham in glaze as it bakes.
  9. After you've glazed the ham 4 times and baked a final time, remove the ham from the oven.
  10. Let cool for 15 minutes, then carve and serve warm!

Notes

  • Adjust cooking time based on ham size; bake approximately 15 minutes per pound at 350°F before glazing.
  • Halve glaze ingredient quantities for smaller hams around 4 pounds.
  • Bake smoked ham until internal temperature reaches 120°F, brushing glaze every 15 minutes during glazing stage.
  • Use an instant-read thermometer for accurate doneness.
