Honey Lime Fruit Salad
Description
This fruit salad combines a variety of fresh and canned fruits including strawberries, kiwi, mango, blueberries, green grapes, and pineapple, all cut into bite-sized pieces. The dressing is a straightforward blend of honey, fresh lime juice, and pineapple juice, which is poured over the fruit and gently mixed to coat all pieces. The acidity from lime and pineapple juice balances the sweetness of the honey and natural sugars in the fruit.
The salad showcases a range of textures from soft mango and strawberries to the slight firmness of grapes and pineapple. It is served chilled and can be mixed again before serving if juices settle or separate. The simple dressing enhances rather than overwhelms the fruit, keeping the dish light and fresh. The easy preparation makes it a convenient option for picnics, potlucks, or as a healthy snack or side.
Ingredients
- 1 pound strawberries washed, hulled and sliced
- 3 kiwi peeled and sliced into half moons
- 2 Mango peeled and diced
- 10 ounces blueberries washed
- 1 cup green grapes halved
- 9 ounce pineapple canned chunks or pieces, or ½ of a fresh pineapple, peeled and diced
- 3 tablespoons honey
- 1 tablespoon lime juice fresh squeezed
- 1 tablespoon pineapple juice from the canned pineapple, if using
Instructions
- Place prepared washed and sliced or diced fruits in a large salad bowl.
- Using a measuring jug, combine the honey, lime juice and pineapple juice. Pour the syrup through the fruit and mix well. Mix the juices accumulated at the bottom of the bowl once again before serving, if not serving immediately.
Notes
