Honey Mustard Chicken
Description
The Honey Mustard Chicken recipe starts by seasoning chicken breasts with salt and pepper, then searing them in olive oil until golden brown on both sides. A sauce combining grainy mustard, Dijon mustard, honey, and melted butter is prepared and spread partly under the chicken in a baking dish, with the remainder drizzled over the top. The chicken then bakes covered, allowing the sauce to infuse into the chicken while cooking it through.
This cooking approach yields a nicely caramelized surface on the chicken from the initial sear, while the baking step ensures tender and fully cooked chicken breasts coated in a glossy, moderately sweet and tangy honey mustard glaze. The final sprinkle of chopped parsley adds a fresh herbal note to the warm sauce.
The dish serves well as a main course alongside neutral sides such as rice or vegetables, which can complement the sauce's balance of sweetness and mustard tang. It is a straightforward recipe suitable for weeknight dinners or meal prepping.
If skipping the searing step, add extra bake time to ensure thorough cooking. This adjustment is useful for simplifying preparation or using other cooking vessels.
Ingredients
- 1 1/4 pounds chicken breast boneless skinless
- 2 teaspoons olive oil
- salt to taste
- black pepper to taste
- 1/4 cup grainy mustard
- 2 tablespoons Dijon mustard
- 5 tablespoons honey
- 3 tablespoons butter melted
- 1 tablespoon parsley chopped
- cooking spray
Instructions
- Preheat the oven to 375 degrees.
- Heat the olive oil in a pan over medium high heat. Season the chicken breasts on both sides with salt and pepper.
- Place the chicken in the pan and sear on both sides until golden brown.
- In a small bowl, whisk together the grainy mustard, Dijon mustard, honey and butter.
- Coat a rectangular baking dish with cooking spray.
- Spread half of the sauce into the bottom of the dish.
- Arrange the chicken breasts on top of the sauce, then drizzle the remaining sauce over the top of the chicken.
- Cover with foil, then bake for 20 minutes. Uncover and bake for an additional 10 minutes or until chicken is cooked through.
- Sprinkle with parsley, then serve.
Notes
- The browning step can be omitted by placing seasoned raw chicken directly in the baking dish; increase baking time by 5 to 10 minutes to ensure doneness.
