Honey Mustard Glazed Carrots

Ingredients

  • 1 bag carrot tri-colored
  • 1-2 tablespoon olive oil
  • ¼ cup honey
  • 2 tablespoon mustard full grain
  • 2 tablespoon Dijon mustard
  • 2 tablespoon balsamic vinegar
  • salt to taste
  • black pepper to taste
  • balsamic glaze parsley chopped, for garnish

Instructions

  1. Wash and peel your carrots.
  2. Cut carrots on a bias about ½ inch thick
  3. In a small bowl mix honey, dijon mustard, full grain mustard, and balsamic vinegar. Set aside.
  4. In a large pan head olive oil on medium heat.
  5. When pan is hot, add carrots, salt and pepper. Sautee for 10 minutes.
  6. Add honey mixture, and continue to cook for an additional 10 - 15 minutes. Stir frequently
  7. Continue to cook until carrots are fork tender (meaning a fork easily pierces the carrots
  8. Remove carrots, serve with parsley, and balsamic glaze for garnish

Notes

  • You don't have to use tri-colored carrots for this recipe!  Any carrots will work just fine, but you may have to adjust cooking time. 
  • Add some fresh garlic for extra flavor
