Honey Nut Cereal Bars
Description
Honey Nut Cereal Bars are a no-bake treat where Cheerios cereal mixes with roughly chopped roasted cashews and almonds. A syrup made from dark brown sugar, butter, honey, cinnamon, salt, and lemon juice is gently boiled and then poured over the cereal-nut mix. Pressing the mixture firmly into a parchment-lined pan and chilling it in the freezer solidifies the bars. The combination of honey and brown sugar adds a rich sweetness complemented by the warm spice of cinnamon and a slight tang from lemon juice. These bars offer a crunchy texture from the cereals and nuts, balanced by a chewy, sticky binder that holds the bars together well.
This recipe results in about 12 bars, ideal for portioned snacks or a grab-and-go breakfast option. The bars can be stored at room temperature or frozen for longer keeping.
Variations are possible such as substituting butter with coconut oil or honey with maple syrup, though honey provides the best adherence. Following the cooling and pressing steps carefully ensures the bars don't crumble.
Ingredients
- ½ cup dark brown sugar
- 4 tablespoons butter
- 2 tablespoons honey
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1 tablespoon lemon juice
- 4 cups Cheerios cereal
- ½ cup cashew roughly chopped, roasted, unsalted
- ½ cup almond roughly chopped, dry roasted, unsalted
Instructions
- Line a 9x9 baking pan with parchment paper.
- In a heavy bottomed small saucepan, combine sugar, butter, honey, cinnamon and salt.
- Bring to a boil over medium-low heat. Keep at a low boil for 4 minutes without stirring. Then remove from heat, add the lemon juice and stir to blend.
- Combine cereal and nuts in a large bowl.
- Pour the sugar mixture on top of the cereal and nuts mixture. Stir well to thoroughly combine.
- Scrape the mixture into the prepared pan. Press down firmly with the spatula to compress any air space out of the mixture. You can also place another piece of parchment on top and press down firmly to compress everything.
- Chill the pan in the freezer for at least 30 minutes before cutting into 12 bars.
Notes
- Store bars wrapped in parchment paper at room temperature for up to 7 days to prevent sticking.
- For longer storage, freeze bars for up to 2 months; rewrap in parchment before placing in a container.
- Butter can be substituted with coconut oil if preferred.
- Maple syrup may be used instead of honey, but honey helps the bars hold together better.
- Press the mixture firmly while assembling to minimize air pockets and improve bar firmness.
