Honey Orange Glazed Carrots

Carrots

  • 2 pounds carrot peeled, fresh
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper freshly ground

Honey Orange Glaze

  • 2 tablespoons orange juice freshly squeezed
  • 2 tablespoons champagne vinegar
  • 1 tablespoon honey
  • ½ tablespoon shallot minced
  • ½ cup olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  2. Peel and slice 2 pounds fresh carrots on the diagonal about 1 ½ inch thick. Make sure all pieces are approximately the same size to make sure they cook evenly.
  3. Combine the cut carrots, 2 tablespoons olive oil, ½ teaspoon kosher salt, and ¼ teaspoon freshly ground black pepper in a large bowl and toss well.
  4. Transfer the coated carrots to the prepared baking sheet and bake for 20-25 minutes, stirring once halfway through, until tender.
  5. Combine 2 tablespoons freshly squeezed orange juice, 2 tablespoons champagne vinegar, 1 tablespoon honey, ½ tablespoon minced shallots, ½ cup olive oil, salt and pepper in a mason jar. Place on the lid and shake well to combine.
  6. Toss the warm cooked carrots in the dressing and enjoy!
