Honey Roasted Butternut Squash

Ingredients

  • 1 2 pound butternut squash, peeled, seeded, and 1/2 inch diced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoon honey
  • 1/2 teaspoon kosher salt
  • 4 ounces crumbled goat cheese
  • 2 teaspoon minced fresh sage

Instructions

  1. Preheat your oven to 400 degrees F and line a rimmed baking sheet with parchment paper. 
  2. In a large bowl add diced butternut squash, olive oil, honey, and kosher salt. 
  3. Toss to combine. 
  4. Spread out onto the prepared baking sheet. 
  5. Add to the oven, roast for 15 minutes, remove from oven and gently stir/flip the squash. 
  6. Add back to the oven and roast for another 15 minutes or until soft and fully cooked. 
  7. Remove from the oven, sprinkle with goat cheese and fresh sage. 
  8. Gently toss to combine.
