  • 1 cup peanuts honey roasted
  • 1 cup brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla extract

Instructions

  1. Place the popcorn kernels in a large pot. Add the cooking oil. Cover and cook over medium heat until most kernels have popped and there are several seconds between pops.
  2. Spread the popped popcorn on a large baking sheet. Add the roasted peanuts.
  3. In a small saucepan, mix brown sugar, honey, butter, and salt. Bring to a boil over medium heat. Simmer for 5 minutes, stirring constantly.
  4. Remove from heat. Stir in baking soda and vanilla extract. Pour immediately over the popcorn mixture.
  5. Bake in a 250°F oven for 1 hour, stirring every 15 minutes.
  6. Line a clean baking sheet with wax paper. Transfer the caramel corn onto the wax paper, separating into pieces. Allow to cool completely.
