Honey Roasted Carrots
Description
In this recipe, trimmed carrots are prepared by cutting them to size—small garden carrots can be left whole or halved, while larger carrots are halved or quartered lengthwise to ensure even roasting. They’re coated with a mixture of honey and olive oil, then seasoned with salt and black pepper before roasting in a hot 425°F oven. Roasting for 20-25 minutes softens the carrots to a tender-crisp texture, allowing some caramelization to develop.
After roasting, the carrots are tossed with butter and freshly chopped dill and parsley, adding richness and herbal freshness that balance the honey’s sweetness. Additional seasoning can be adjusted after adding the herbs. This side dish offers a natural sweetness complemented by savory and herbal flavors and works well as a warm accompaniment to mains.
These carrots are best served warm, straight from the oven, maintaining their texture and color. The roasting method enhances the carrots’ natural sugars without overwhelming them with honey’s sweetness.
