Honey Roasted Carrots
Description
This recipe involves peeling and seasoning a bunch of carrots with olive oil and honey, then sprinkling salt, black pepper, and a careful amount of cayenne pepper for mild heat. The carrots roast at 400°F on a parchment-lined or sprayed sheet tray until fork-tender and slightly caramelized, enhancing natural sweetness and flavor complexity.
The combination of honey and cayenne pepper offers a gentle contrast of sweet and spicy notes, making the carrots flavorful without overpowering their natural taste. Served warm, they complement a variety of main dishes.
Stored cooled in an airtight container in the refrigerator, these carrots keep well for 3-4 days and can be reheated gently in the microwave. Multiplying the recipe allows making enough for larger gatherings.
