  • 2 pounds carrot peeled & cut into pieces
  • 1/4 cup olive oil
  • 1/4 cup honey
  • salt to taste
  • black pepper to taste
  • parsley chopped, to taste (optional, fresh

Instructions

  1. Preheat oven to 375F and move the rack to the middle position.
  2. Prep carrots and add them to a baking dish. Toss with olive oil, honey, and salt & pepper.
  3. Roast carrots until desired tenderness is reached, stirring them about halfway through. My carrots were medium-to-large size and I cut them into about 1/2" thick pieces and they took an hour to get nice and soft. I recommend stirring them after 25-30 minutes or so, and then gauging cooking time from there based on how done they are.
  4. Once the carrots are done, give them a stir (there will be some "sauce" left). I sprinkled mine with parsley, but that is not necessary. Serve immediately. 

Notes

  • Roasting time will vary with the size and thickness of carrot pieces, so adjust accordingly to achieve desired tenderness.
  • For deeper caramelization and very soft carrots, extend the roasting time beyond one hour as preferred.
  • Stir the carrots about halfway through roasting to promote even cooking and browning.
  • Adding fresh chopped parsley after roasting is optional and adds a fresh flavor contrast.
  • Stored leftovers will keep best refrigerated and should be eaten within a few days for optimal quality.
