Honey Roasted Chicken and Sweet Potatoes Skillet

Honey Roasted Chicken and Sweet Potatoes Skillet brings together seasoned chicken thighs and diced sweet potatoes cooked in a butter and honey glaze with pecans and dried cranberries. Baked until the chicken is cooked through and potatoes are tender, this skillet dish combines sweet, savory, and nutty flavors with a balance of textures from tender meat, soft-sweet potatoes, and crunchy nuts.

Description

This recipe seasons chicken thighs with salt, pepper, garlic powder, and Italian seasoning before browning them in a skillet with butter and honey. The sweet potatoes then cook briefly in the honey-butter mixture, coated with additional herbs and combined with pecans and dried cranberries for bursts of texture and flavor contrast. The entire skillet is baked to finish cooking the chicken and soften the sweet potatoes.

The sticky honey glaze highlights the natural sweetness of the potatoes and complements the savory, herb-scented chicken. Pecans add a crunchy contrast while dried cranberries introduce subtle tartness. The use of Italian blend seasoning contributes aromatic herbal notes that uplift this straightforward one-pan meal.

This dish is hearty and well-suited for an easy weeknight dinner, offering a pleasing combination of textures and balanced indulgence. Garnishing with fresh thyme enhances the aroma and appearance just before serving.

Chicken thighs may be boneless skinless or bone-in skin-on depending on preference, with cooking time approximately 10-15 minutes in the oven after initial stove-top browning steps.
