Honey Roasted Smashed Potatoes
Description
Honey Roasted Smashed Potatoes starts with small red or baby potatoes roasted whole until tender enough to be easily smashed. The smashing step flattens them just enough to increase surface contact, which enhances the glazing process. After smashing, they’re coated with a warm blend of melted butter, honey, Dijon mustard, salt, and dried oregano. This coating melts into the potatoes before returning to the oven briefly to slightly caramelize the honey and intensify flavor. The result is a combination of soft, fluffy interiors with glossy, slightly crisped outsides.
The flavor profile is mildly sweet from the honey balanced with tang from the mustard and herbaceous notes from oregano. This approach elevates simple roasted potatoes without overwhelming richness or heaviness. These potatoes work well alongside grilled or roasted proteins or as part of a casual gathering meal.
The recipe benefits from monitoring potato size to adjust roasting times and ensures the potatoes are dry and well-mashed before glazing to maximize absorption. Serve them fresh from the oven to enjoy the contrast between the tender flesh and slightly caramelized edges.
Ingredients
- 15 small potato red, baby
- 1/2 cup butter melted
- 3 tablespoons honey
- 1 tablespoons Dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon oregano dried
Instructions
- Preheat oven to 400 degrees. Lightly grease a baking sheet.
- Clean the potatoes and place them on the prepared baking sheet. Bake for 30 to 40 minutes until potatoes can be smashed with a fork. Actual baking time will depend on the size of the potatoes. Larger potatoes take longer.
- In a small bowl, whisk together melted butter with honey, dijon mustard, salt, and oregano.
- Remove the baking sheet from the oven. Use a fork to smash each potato, as pictured. Pour the butter mixture over the potatoes. Return to the oven and bake 5 to 10 minutes more, giving it a little time to melt and slightly caramelize into the potato.
- Serve hot with juices.
