Honey-Vanilla Yogurt Fruit Salad

Honey-Vanilla Yogurt Fruit Salad blends creamy yogurt sweetened with honey and flavored with pure vanilla extract with a mix of fresh apples, berries, grapes, and lemon juice. The salad offers a balance of creamy, sweet, and tart in a refreshing and colorful dish suitable for breakfast or light dessert.

Description

This fruit salad recipe involves whisking plain, creamy yogurt with honey and vanilla extract to create a smooth flavored base. Fresh fruits including diced apple, blueberries, raspberries, halved strawberries, and grapes are combined and lightly tossed with fresh lemon juice to brighten flavors and prevent browning.

The salad can be served as fruit portions topped with spoonfuls of the yogurt mixture or tossed together for an evenly coated creamy fruit blend. The choice depends on whether you anticipate leftovers or prefer presentation.

Selecting a yogurt with a creamy texture rather than gritty or fat-free types significantly improves the dish. The fruit mix is adaptable but should exclude very juicy fruits that might dilute the yogurt and change the texture.

This salad works well as a nutritious start to the day or a light, sweet treat. It is simple, relying on fresh quality ingredients for the best flavor and texture balance.

Ingredients

Servings
  • 2 cups PLAIN yogurt not fat-free; see note
  • 2 tablespoons honey
  • ½ teaspoon vanilla extract pure
  • 1 apple cored and small diced, large
  • 1 cup blueberries
  • 1 cup raspberry
  • 2 cups strawberry hulled, cut in half or diced
  • 1-2 cups green grapes cut in half
  • 1 tablespoon lemon juice fresh

Instructions

  1. Whisk together the yogurt, honey and vanilla extract. Set aside.
  2. Combine all the fruit in a serving bowl. Toss with lemon juice and gently mix.
  3. Serve fruit individually in bowls/plates and dollop with a spoonful (or two!) of yogurt. Or, if you don't anticipate leftovers, toss the fruit and yogurt together for a creamy mishmash of fruit salad.

Notes

  • Choose a creamy yogurt rather than lowfat or fat-free for better texture and flavor.
  • Pre-flavored honey vanilla yogurt can substitute for the plain yogurt plus honey and vanilla mixture if preferred.
  • Use fruits that hold shape and avoid very juicy fruits that might water down the yogurt.
  • Lemon juice added to the fruit prevents browning and adds brightness.
