Description

This Honey Wheat Bread recipe starts by soaking instant oatmeal in lukewarm water, then mixing in milk with yeast, honey, oil, salt, and the soaked oats. The combination of whole wheat and all-purpose flour is gradually incorporated to form a dough that is mixed with a dough hook until smooth and elastic. The dough rests briefly before further mixing to improve gluten development.

The dough is divided, rolled into rectangles, and rolled up tightly jelly-roll style, which helps create desirable texture and crumb in the final bread. After sealing seams, the loaves are placed in oiled bread pans sprinkled with oats and allowed to rise until doubled in size.   • 1 cup instant oatmeal
  • 2 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 cup water lukewarm
  • 1/4 cup milk
  • 1/4 cup honey
  • 1/4 cup neutral cooking oil generic cooking oil
  • 1 tbsp salt
  • 2 tbsp yeast dry

Instructions

  1. Soak oats with half of the water (see ingredients), for 15 minutes.
  2. Combine milk with yeast, let it sit for a minute or so. Mix in the remaining water, honey, oil, salt and oats. In a separate bowl combine wheat and white flour. In small portions - mix in flour. 
  3. If you are using a mixer, use a dough hook. Mix on a low speed until the dough is fully mixed, then mix on a medium speed for 2 minutes. The dough should clear the sides, but stick to the bottom. Let the dough rest for 5 minutes. Turn the mixer on again and mix for 3 minutes. 
  4. Cover the bowl with plastic wrap. Let it rise for 1½ hours.
  5. Divide in half. Roll each portion into a rectangle. Roll it up into a jelly-roll style, beginning with a long side.
  6. Pinch seams to seal.
  7. Spray the bread pan with oil and sprinkle some oats on the inside. Place each loaf in the inside and cover it with a towel. Let it rise in a warm place until doubled, about 40 minutes.
  8. Brush the tops with water and sprinkle the loaf with oats. 
  9. Bake at 375 °F for 35-45 minutes or until golden brown.
