Honey Wheat Pancakes

Honey wheat pancakes make a healthy start to your day. Instead of maple syrup, make this simple honey butter syrup for a fun change!

Ingredients

Servings
  • 1 1/2 cups whole wheat flour white
  • 1/2 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 large egg beaten
  • 1 1/2 cups buttermilk
  • 3 tablespoons coconut oil melted
  • 3 tablespoons honey

Honey Butter Syrup:

  • 1/2 cup butter melted
  • 1/4 cup honey
  • 1 tablespoon half and half
  • 1/4 teaspoon cinnamon

Instructions

  1. In a large bowl, combine the flour, baking powder, salt and baking soda. Set aside.
  2. In a small bowl, combine the eggs, buttermilk, coconut oil and honey. Add this mixture to the dry ingredients and mix it until it is smooth. Fry the pancakes on a hot, lightly greased skillet, baking each side for 2-3 minutes, or until the pancake is cooked through.
  3. For the syrup, combine the melted butter, honey, half and half and cinnamon in a small bowl. Mix well right before serving on top of the pancakes.

Notes

  • The coconut oil might harden a bit once added to the mixture. That is OK. Just mix as well as possible.
