Hootenanny
Description
Hootenanny features a batter of eggs, milk, flour, and warm spices like cinnamon and nutmeg, whisked together until frothy and poured onto melted butter heated in a baking dish. The initial high heat from the melted butter helps the batter puff up during baking at 425°F, forming edges that turn golden brown while the center stays soft and set, resembling a cross between a baked pancake and a Yorkshire pudding with a sweet twist.
The vanilla and spice blend provides a warm aroma and flavor balance, while baking without stirring preserves a distinct texture contrast between crispy edges and a tender interior. Once baked, slicing into eight portions makes it ideal as a hearty single-serving breakfast or brunch.
It is commonly best served warm with maple syrup, fresh fruit, or dusted with powdered sugar to enhance its naturally mild sweetness and spice. The dish settles slightly after baking, which is expected and does not indicate a failure in texture or rise.
Ingredients
- 6 tablespoons butter
- 6 large egg
- 1 cup milk
- 1/4 teaspoon salt
- 1 cup flour
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 425 degrees.
- Place the stick of butter in a 9x13 baking dish and put it in the oven to melt while you prepare the batter. Keep an eye on the butter and remove the pan from the oven if it starts to brown, but work quickly so that the pan does not cool.
- Beat the eggs, milk, salt, cinnamon, vanilla, and nutmeg until frothy.
- Whisk in the flour until well combined.
- Pour over the melted butter in the baking dish. Do not stir.
- Bake for 25 minutes or until the center is set and the edges are browned.
- Slice into 8 pieces and serve with maple syrup, fresh fruit, or powdered sugar.
Notes
- Ensure the butter and the baking dish are hot before adding the batter to help the batter puff properly.
- It is normal for the hootenanny to settle a bit after removing from the oven; this does not affect the texture.
- Serve warm with maple syrup, fresh fruit, or powdered sugar for best flavor.
