Hoppin’ John Recipe
Description
Hoppin’ John Recipe involves sautéing chopped onions, green bell peppers, celery, and optionally jalapeño for heat in olive oil until softened. Adding smoked ham and garlic releases rich, smoky flavors. Black-eyed peas, pre-soaked and rinsed, are combined with Cajun seasoning blend and chicken broth, then simmered until tender but not mushy, usually about an hour.
The resulting dish features tender black-eyed peas cooked in a richly flavored, slightly spicy broth with savory ham and aromatic vegetables. Served over white rice and garnished with chopped parsley, it balances mild Cajun heat with smoky, earthy notes from the ham and peas.
Hoppin’ John traditionally serves as a side dish and can accommodate varying heat levels by adjusting the amount of Cajun seasoning or jalapeño. Variations in cooking time depend on bean freshness and soaking.
The recipe serves 12 as a side. When using canned peas, reduce chicken broth amount accordingly. Calories are calculated without the rice.
Ingredients
- 1 tablespoon olive oil
- 1 onion chopped, large
- 1 green bell pepper chopped, large
- 1 jalapeno pepper chopped (optional – I like it for a bit of extra heat)
- 1 celery chopped, stalk
- 2 cloves garlic chopped
- 1 pound smoked ham chopped
- 2 tablespoon Cajun seasoning blend (or more to taste)
- 1 pound black-eyed peas sorted through, rinsed, soaked and drained
- 4 cups chicken broth or more as needed
- white rice cooked, for serving
- parsley chopped, for serving
Instructions
- Heat a large pot to medium heat and add the olive oil.
- Add the onion, peppers and celery and cook them until softened, about 5 minutes.
- Add the garlic and smoked ham and cook another minute, stirring, until fragrant.
- Add the Cajun seasonings, blackeyed peas and chicken broth. Bring to a quick boil, then reduce the heat.
- Simmer for 1 hour, or until the beans are nicely softened, but not mushy.
- Serve over rice and garnish with chopped parsley.
Notes
- Serves 12 as a side dish with a mild heat level.
- Cooking time for black-eyed peas varies due to bean age and water quality; test for softness between 30 and 120 minutes.
- For canned black-eyed peas, reduce chicken broth to 2 cups.
- Calorie count excludes the white rice served alongside.
