Ingredients

  • 3 pounds potato cut into 1-inch chunks, or Russet potatoes, Yukon gold variety
  • 4 cloves garlic
  • 8 ounces cream cheese softened, cut into cubes
  • cup butter melted, salted
  • ½ cup milk or cream, warm
  • ¼ cup horseradish or to taste, prepared
  • 1 green onion thinly sliced
  • 1 tablespoon parsley chopped, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Place potatoes in a large pot of cold salted water with the garlic cloves.
  2. Bring potatoes to a boil, reduce heat to simmer, and cook 15-20 minutes or until tender.
  3. Drain well and place potatoes & garlic back into the warmed pot.
  4. Add cream cheese and butter to the potatoes and using a masher, mash potatoes.
  5. Add warmed milk a little bit at a time while continuing to mash until smooth and creamy. Stir in horseradish, green onion, and parsley.
  6. Season with salt and pepper. Serve hot.

Notes

  • You can substitute Yukon gold potatoes with peeled Russet or baking potatoes as desired.
