Horseradish Sauce

This horseradish sauce blends freshly wrung horseradish root with whipped heavy cream and seasonings for a creamy, spicy condiment. The whipped cream base softens the horseradish’s pungency while maintaining its sharp flavor, making it suitable to serve alongside beef, seafood, or sandwiches.

Description

The Horseradish Sauce starts by draining excess liquid from prepared horseradish root to concentrate its flavor. The heavy cream is whipped to stiff peaks, lending a light, airy texture. The horseradish is combined with vinegar, sugar, dry mustard, salt, and white pepper, then gently folded into the whipped cream to maintain volume and create a smooth sauce with a balanced heat.

Its creamy texture and tangy, spicy notes make it a versatile accompaniment to roast beef, smoked fish, or as a spread for sandwiches. Adjusting the horseradish quantity allows control over the heat level. Since the sauce uses plain horseradish root rather than pre-made horseradish sauce, it has a fresher, less processed taste.

You can prepare this sauce several hours ahead to let flavors meld and store leftovers refrigerated to preserve freshness. Gently fold the horseradish mixture into the cream to keep the whipped texture intact.

Ingredients

Servings
  • 1/2 cup horseradish not creamed or sauce. 4 ounces, bottled
  • 2 Tablespoons white wine vinegar
  • 2 teaspoons granulated sugar (Swerve can be substituted for low carb)
  • 1/2 teaspoon dry mustard English
  • 1 teaspoon kosher salt
  • 1 teaspoon white pepper
  • 1 cup heavy cream chilled

Instructions

  1. Using a clean dish towel, wring out as much liquid as possible from the horseradish
  2. Beat the heavy cream until stiff peaks form.
  3. In a small bowl, stir the horseradish, vinegar, sugar, mustard, salt and white pepper together until well blended.
  4. Gently fold the horseradish mixture into the cream. Taste and adjust seasoning, adding more horseradish as desired.

Notes

  • Always use prepared horseradish root, not horseradish sauce, for intended flavor and texture.
  • Gently fold horseradish mixture into whipped cream to maintain lightness.
  • The sauce can be made a few hours before serving and kept refrigerated.
