This hot chicken salad is incredible! My favorite chicken salad is spread in a baking dish and topped with potato chips, baked until warm then served with crisp, refreshing endive. It's super satisfying and so delicious!

Ingredients
- 1 ½ cups chicken cooked, shredded
- ½ cup celery diced
- ¼ cup onion diced; or shallot
- ½ cup yogurt plain, Greek
- 3 tablespoons mayonnaise
- 2 tablespoons sweet relish
- 1 tablespoon parsley chopped, fresh
- 2 teaspoons Dijon mustard
- 1 teaspoon chives dried
- ½ teaspoon dill dried
- salt kosher salt
- black pepper kosher salt
- 1 cup potato chips kettle cooked
- chives for topping, fresh
- endive chips or crackers for serving
Instructions
- Preheat the oven the 375 degrees F
- Place the chicken, celery and onions in a large bowl. In another bowl whisk together the yogurt, mayo, relish, mustard, chives, dill and a big pinch of salt and pepper. Add the mixture to the chicken and toss well. Taste and season with more salt and pepper if needed.
- Spread the mixture in a 9x9 baking dish. Top with the potato chips.
- Bake for 20 to 25 minutes. Remove and top with fresh chives. Serve!
