Hot Honey Lime Wings Recipe
Description
This Hot Honey Lime Wings recipe begins by coating chicken wings in a mixture of baking powder and kosher salt. Baking the wings on a wire rack allows the skin to crisp as the fat renders out during a two-step baking process with an initial higher heat, followed by moderate heat to finish cooking. This method produces wings with a crisp exterior without frying.
The sauce combines honey with lime juice and spices including garlic powder, red chile flakes, smoked paprika, cumin, coriander, and ginger. The wings are tossed in this sauce after baking, coating them with a sticky, sweet, tangy, and subtly smoky glaze. Garnishes of toasted sesame seeds and sliced green onion add texture and fresh aroma.
Serve these wings as an appetizer or main dish where the contrast of crispy skin and sticky sauce stands out. The layered spices and citrus accents create a distinct flavor profile that elevates simple baked wings.
For optimal crispness, ensure the wings are dry before coating and bake on a rack. The baking temperature sequence renders fat effectively. This recipe allows flexibility in spice levels by adjusting the chile flakes or adding more lime juice for brightness.
Ingredients
Chicken Wings:
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons kosher salt
- 2 1/2 pounds chicken wings or drummets
Sauce:
- 2/3 cup honey
- lime juice juice from 2 limes
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red chile flakes
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cumin ground
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground ginger
Garnish:
- 1 teaspoon sesame seeds
- 1 green onion , thinly sliced (for garnish)
Instructions
To Make the Wings:
- Place a wire rack inside a rimmed baking sheet. Prep the chicken: wash the chicken wings, followed by drying them off thoroughly using paper towels. *Washing chicken is super controversial - some people do it some people don’t. Do what you want lol.
- In a medium bowl, mix together the baking powder and salt. Add the wings to the bowl and toss them with the mixture, thoroughly. Transfer the wings to the oven for 20 to 25 minutes until slightly crispy.
- Turn the heat to 350 degrees F and bake for a remaining 20 minutes, until medium golden brown.
To Make the Sauce:
- In a small bowl, whisk together the honey and spices.
- Add the chicken wings to a bowl and pour the the sauce on top, tossing them in the sauce until completely coated.
- Transfer them to a serving plate and garnish them with sesame seeds and sliced green onion.
Notes
- Tossing wings in baking powder and salt before baking helps render fat and crisps the skin without frying.
- Bake wings first at a lower temperature to render fat then increase heat for a golden crust.
- Use a wire rack on a baking sheet to allow air circulation around wings for even crisping.
- Adjust chili flakes in the sauce to control heat level according to preference.
