Hot Honey Recipe

Hot Honey is a spicy sweet condiment made by infusing honey with chili flakes or fresh hot chilies, optionally brightened with apple cider vinegar. The heat from the peppers gently blends into the honey without boiling, preserving its smooth texture and sweetness. This versatile flavor enhancer can add a touch of heat to dishes or drinks.

Description

Hot Honey Recipe blends honey with dried chili flakes or fresh sliced hot peppers, gently heated to infuse the chili flavor and spice into the honey. Apple cider vinegar can be stirred in afterward for an optional tangy note. The process avoids boiling to keep the honey smooth and flavorful. When fresh peppers are used, straining them out after infusion is recommended for longer storage, whereas dried peppers can be left in or strained based on preference.

The resulting hot honey carries a balance of sweetness and heat, suitable for drizzling over foods or adding to cocktails. Its texture remains pourable and silky, retaining the natural viscosity of honey. The vinegar, if used, lends brightness and a subtle acidity to complement the spicy sweetness.

This condiment stores best refrigerated when made with fresh peppers due to perishability; hot honey with dried chilies can be kept in a cool, dry place in an airtight container. The flavored hot peppers left from the infusion process can be repurposed as candied garnishes or cocktail components.

Ingredients

Servings
  • 2-3 tablespoons chili flakes or use crushed dried chilies, or 1-2 fresh hot chilies, sliced, hot
  • 1 cup honey
  • 1 tablespoon apple cider vinegar (optional)

Instructions

  1. Add the peppers and honey to a small pot. Heat and simmer for 1-2 minutes to infuse them with the pepper flavor and heat. Do not allow the honey to boil.
  2. Remove from heat and stir in the vinegar (if using). If using fresh peppers, strain the honey into a jar. If using dried peppers, strain only if desired.
  3. Cool and store in an airtight glass container. Makes 1 cup.

Notes

  • Store hot honey made with fresh peppers in the refrigerator to extend freshness.
  • Strain out fresh peppers after infusion to improve storage stability.
  • The infused hot peppers can be reused in desserts or cocktails as a sweet-spicy garnish.
  • Dried chili version can be stored at room temperature in an airtight container, and straining is optional based on texture preference.
