Hot Honey Salmon Bowl

  • 1 lb salmon cut into 1-inch chunks, fillets
  • 1 Tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • 10 oz broccolini
  • 12 oz Brussels sprouts , trimmed and halved (about 2.5 cups)
  • ½ cup hot honey homemade or store-bought
  • 4 cups rice hot cooked
  • ranch dressing for garnish, creamy

Instructions

  1. Preheat oven to 400 degrees F. Line a sheet pan with parchment paper.
  2. Add brussels sprouts and broccolini to a large mixing bowl, drizzle with olive oil, season with salt and pepper. Spread onto baking sheet and cook for 12 minutes, tossing once during cooking.
  3. Prepare Salmon: Remove skin from salmon, if necessary, and cut into uniform 1-inch cubes. Add salmon to a bowl and drizzle with olive oil. Season with salt, pepper, garlic powder, and smoked paprika, gently tossing to coat.
  4. Remove vegetables from oven and push to one side of the pan.
  5. Add salmon to the other side and drizzle 1 ½ Tablespoons hot honey over salmon and veggies. Return to oven for about 8 minutes, or until salmon flakes gently when touched with a fork (about 140 degrees).
  6. Spoon rice into bowls and portion out a big scoop of salmon and veggies on top. Drizzle with desired additional hot honey sauce and a little drizzle of ranch.

Notes

  • Serving Size: 3oz salmon, ¾ cup cooked rice, 2 oz broccolini, 2-3 oz brussels sprouts.
