Ingredients
- 13.75 oz artichoke hearts drained, packed in water
- 10 oz spinach thawed and squeezed, frozen
- 1/4 cup shallot chopped
- 1 clove garlic
- 1/2 cup Greek yogurt fat-free
- 1/2 cup mayonnaise light
- 2/3 cup Parmesan Cheese good quality grated
- 4 oz mozzarella cheese shredded, part-skim
- salt fresh, to taste
- black pepper fresh, to taste
- olive oil spray form
Instructions
- In a small food processor, coarsely chop the artichoke hearts with the garlic and shallots.
- Preheat oven to 375°F.
- Place in an microwave safe dish, covered with the lid vented and microwave 3 to 5 minutes, until hot and cheese is melted.
- Combine all the ingredients in a medium bowl.
- Place in an oven-proof dish and bake at 375F for 20-25 minutes, until hot and cheese is melted. Serve right away.
