This foam indicates the yeast is alive and active, essential for successful dough rising. Instant yeast, however, does not require this activation step and can be incorporated directly into dry ingredients.
Fresh yeast, if available, requires similar treatment but is less commonly used. For storage, yeast lasts longer when refrigerated or frozen and does not need thawing before use. Checking for foam after activating helps ensure yeast freshness and viability before baking bread or other yeast-leavened products.
