Description

Caramelizing onions requires slicing peeled yellow onions thinly then cooking them in vegetable or canola oil over progressively reduced heat. Starting at medium high heat, onions soften and begin browning within 10 minutes with occasional stirring. Reducing heat to medium low and stirring frequently for another 10 minutes deepens color gently. Finally, maintaining low heat and stirring until the onions become evenly rich brown completes the caramelization in around 15 more minutes. The onions should be soft but retain some structure without becoming mushy.

These caramelized onions can enhance many dishes, providing natural sweetness and umami depth. They store well in airtight containers for several days in the refrigerator.

Instructions

  1. Julienne slice each onion half and separate the slices.
  2. Heat a large pan with low sides on medium high heat. Add the oil in the pan, and when there is a wisp of smoke, carefully add the onions to the pan.
  3. Stir periodically, for 10 minutes, allowing them to color and let the pan regain heat before stirring again
  4. Reduce heat to medium low and continue to cook, stirring frequently for about 10 minutes.
  5. Reduce heat to low and continue to cook until evenly caramelized, about 15 more minutes.
  6. Turn off the heat and spread the onions out in the pan and allow to cool. They should be a rich brown and soft, but not mushy.

Notes

  • Store leftover caramelized onions in an airtight container in the refrigerator for up to four days.
  • Use a wide pan for even cooking and moisture evaporation.
