How to Clarify Butter
Description
Clarified butter is made by slowly melting butter over low heat to separate the milk solids and water from the butterfat. By carefully skimming foam off the surface and straining the liquid through a coffee filter or cheesecloth, the resulting golden liquid is clear butterfat free of solids. Because the milk solids, which burn easily, are removed, clarified butter can be used for cooking at higher temperatures. It has a clean fatty flavor and can be refrigerated for up to a month. This preparation is a simple way to improve butter’s cooking properties.

- 1 pound butter
Instructions
- Place butter in a small saucepan and melt over low heat.
- Cook at a low temperature ensuring the butter isn't browning while gently skimming the foam off the top. This can take a little time, be patient.
- Once the foam has been removed and you're left with a yellow liquid, allow it to cool/rest for about 5-7 minutes. You'll see some sediment at the bottom (these are the milk solids).
- Line a mesh strainer with a coffee filter or cheesecloth and gently pour the golden liquid into a container while leaving any solids behind.
- Refrigerate clarified butter up to 1 month.
