Description
To cook black-eyed beans on the stovetop, begin by rinsing and soaking them overnight to reduce cooking time. After draining, the beans are placed in a pot with water or broth, flavored with aromatics such as garlic, bay leaves, and onion. Simmering partially uncovered for 45 to 90 minutes allows control over bean firmness. Additional liquid may be added as needed during cooking. Once done, beans are drained, and the cooking liquid can be reserved for enhancing other dishes like rice or soups.
The Instant Pot method speeds cooking significantly. Beans and liquid are combined, and the pot is sealed for a high-pressure cook time of 30 minutes, followed by natural pressure release. This technique yields tender beans in less time while preserving flavor and nutrients.
The cooked beans are a versatile ingredient that can be incorporated into salads, stews, or served simply with seasoning. They provide a protein-rich option that is low in points if prepared without meat additions.

How To Cook Black Eyed Beans On The Stovetop
- Measure out beans and soak them overnight in cold water.
- Then drain and wash them and transfer them to a pot.
- Add enough water or broth so that the liquid is about 1 inch (3cm) above the beans.
- Add in seasonings of your choice. I generally add in garlic, bay leaves and onions.
- Bring to the boil, then simmer partially uncovered for between 45 - 90 mins depending on how firm or soft you want your beans.
- If the water or broth dries out before the beans finish cooking then add some more.
- When cooked, drain the beans. You can reserve the cooking liquid and use it to cook rice or flavour soups and stews.
How To Cook Instant Pot Black Eyed Beans
- Rinse beans and add to the Instant Pot insert.
- Pour in water, chicken or vegetable broth and stir.
- Place lid on, and turn the valve to the sealing position. Set the Instant Pot to manual pressure / high pressure for 30 mins.
- Once done, allow for a complete natural pressure release (NPR). Then open lid, stir, season to taste and serve.
How To Cook Black Eyed Beans In The Oven
- Place the pre-soaked beans into an oven-ready dish with enough water or broth so that there is 4cm (1.5 inches) of liquid above the beans.
- Add in your flavorings and bake about 80 mins at fan-assisted 160C / 180C / 350F / gas 4.
- Check the beans to see if they are cooked through.
- If not then bake them for a little bit longer, checking them every 10 mins.
Notes
- Overnight soaking reduces cooking time and improves texture.
- The cooking liquid from the beans can be saved to enhance rice or soups.
