How to Cook Brats on the Stove
Description
This recipe guides you through pan-searing bratwurst until browned on both sides, then adding sliced onions to soften and caramelize alongside. Beer is added, and the pan is covered to simmer the sausages gently, ensuring they cook evenly and absorb aromatic flavors from the beer and onions. The sauce is then reduced slightly to concentrate its taste.
The result is bratwurst with a firm, cooked center, encased in a golden-brown exterior, and surrounded by a savory beer-onion sauce. Salt and pepper finish the dish.
Serving immediately after cooking keeps the sausages juicy and flavorful. Slightly larger brats may require longer cooking time, so checking doneness by internal temperature or slicing one open is recommended. This method delivers bratwurst ready for sandwiches, sides, or casual meals.
Ingredients
- 10 bratwurst about 75 g/ 2.7 oz each (Note, small
- 1 tablespoon vegetable oil
- 1 onion more or less 150 g/ 5.3 oz, medium
- 250 beer 8.5 fl.oz, 1 cup

Instructions
- Quarter the onion and slice the quarters.
- Heat a large thick-bottomed pan (preferably cast-iron skillet). Add oil. Sear the brats on medium-high heat for about 3 minutes, flip using tongs and cook on the other side for another 3 minutes.
- Add the onions between the sausages and cook for about 2 minutes, until golden, stirring a few times.
- Flip the sausages again, add beer, cover, and cook on low heat for about 10 minutes, flipping again halfway. The internal temperature should read 71 degrees Celsius/160 degrees Fahrenheit. If you don't have a meat thermometer, just cut one sausage in the middle, it's easy to see if it's cooked through.
- Remove the brats, add salt and pepper to taste, and reduce the sauce for about 2 minutes. Return the sausages to the pan and turn them into the sauce.
- Serve immediately.
Notes
- For larger bratwurst, extend cooking time and check doneness by slicing or measuring internal temperature.
