Description
Cooking breakfast sausage links in a frying pan with vegetable oil ensures a nicely browned surface and thorough cooking inside. The technique involves heating the oil until shimmering, placing the links in the pan, and allowing them to sear without moving for at least three minutes to develop crisp skins and release from the pan. Turning the links carefully after this initial sear helps maintain their shape and texture.
If cooking speed needs increasing, sprinkling a small amount of water in the pan and covering the sausages briefly steams them, which cooks them faster but can cause splatter. It is important not to overcrowd the pan to avoid steaming and instead promote proper frying. For larger batches, cooked sausages can be kept warm on a paper towel-lined oven tray at low heat.
While sausage links often contain enough seasoning, adding salt or pepper is optional based on taste. The recipe works with various oils that have suitable smoke points, but butter is not recommended. Vegetarian sausage links also benefit from the water and lid steaming method to cook through evenly.

- 4 sausage links
Instructions
- Place a 9-10” frying pan onto the stove top and set the eye on medium heat. Pour in the vegetable Oil and allow the pan to come to temp. The pan is at the right temperature when the oil appears to glisten and shimmer on the surface.
- Add the sausage links to the frying pan and cook until there is no longer pink in the sausage link. Remove to a paper towel lined plate and allow to drain for 2 minutes before serving. Serve hot.
Notes
- Allow sausage links to cook undisturbed for at least 3 minutes to develop crisp skins and prevent tearing.
- Sparingly sprinkle water and cover the pan to steam links when cooking speed needs increasing; beware of hot spatter.
- Do not overcrowd the pan to ensure sausages fry instead of steam.
- Plan about 3 to 4 links per person for serving.
- Keep cooked sausage links warm on a paper towel-lined tray in a low-temperature oven when cooking large batches.
- Use vegetable or other high smoke point oils; avoid butter for frying sausages.
