How To Cook Corn on the Cob
Description
This method begins by combining water, milk, optional butter, and sugar in a stockpot, gently bringing the liquid to a low simmer without salt to avoid toughening the corn. Ears of shucked corn are then added and simmered covered for about 8–10 minutes until tender. The use of milk and sugar in the cooking liquid subtly enhances sweetness and richness.
The final corn ears maintain a crunchy, juicy texture typical of fresh corn, with a mild buttery flavor from the cooking liquid and optional finishing butter. The gentle simmer prevents kernels from becoming mushy or overcooked.
The cooked corn is served with butter, salt, and pepper according to taste. This method suits cooks aiming for straightforward stovetop preparation. The recipe notes alternate cooking styles such as grilling, roasting, pressure cooking, slow cooking, air frying, or microwaving, each offering variations in flavor and ease.
These alternative methods provide choices for different kitchen equipment or timing preferences, though the described stovetop simmering is favored for balanced texture and taste.
Ingredients
- 3 quarts water enough to cover corn
- 2 cups milk (we like using whole)
- 1/2 cup butter optional
- 1/2 cup sugar
- 6 ears corn shucked, on the cob
- butter to taste
- salt to taste
- black pepper to taste
Instructions
- Fill a large stockpot about halfway with cold water, add milk, butter (optional), and sugar and bring to a LOW simmer. Do not add salt.
- Once water is at a low simmer, add corn. Cover and simmer for about 8-10 minutes.
- Remove corn with tongs and serve with butter, salt and pepper (see tips above).
Notes
- Do not add salt during cooking as it can toughen the corn kernels.
- Alternate methods include roasting in foil at 450°F for 20 mins, Instant Pot cooking, slow cooker, air fryer, grilling with husks on, or microwaving in a damp towel.
- Serving with butter, salt, and pepper enhances the flavor after cooking.
