How to cook hominy corn {Ecuadorian mote}
Description
How to cook hominy corn {Ecuadorian mote} involves first soaking dried hominy corn overnight to rehydrate the kernels. After thorough rinsing, the corn is boiled in a large pot with lightly salted water over medium heat for approximately 2 to 3 hours. The slow cooking process softens the hard corn kernels until they become tender and start to "pop," indicating doneness.
The cooked mote has a chewy texture, making it suitable for serving plain as a side dish or incorporating into other traditional preparations. Because mote takes significant time to cook, initial soaking reduces cooking time and aids in achieving the desired softness.
