How to cook hominy corn {Ecuadorian mote}

This recipe explains how to cook dried hominy corn, also known as Ecuadorian mote, by soaking it overnight and then boiling it in salted water for several hours until soft. The corn kernels soften and begin to pop, creating a chewy, tender texture suitable as a side dish or ingredient in other recipes.

Description

How to cook hominy corn {Ecuadorian mote} involves first soaking dried hominy corn overnight to rehydrate the kernels. After thorough rinsing, the corn is boiled in a large pot with lightly salted water over medium heat for approximately 2 to 3 hours. The slow cooking process softens the hard corn kernels until they become tender and start to "pop," indicating doneness.

The cooked mote has a chewy texture, making it suitable for serving plain as a side dish or incorporating into other traditional preparations. Because mote takes significant time to cook, initial soaking reduces cooking time and aids in achieving the desired softness.
