How to Cook Instant Pot Butternut Squash

This method steams cubed butternut squash in an Instant Pot using water and pressure for a soft texture that can be held or mashed. The squash is peeled and seeded, cut into 1-inch cubes, cooked for 3 to 4 minutes under high pressure, and then seasoned with kosher salt. It offers a quick way to prepare squash suitable for mashing or use in other recipes.

Description

How to Cook Instant Pot Butternut Squash provides a straightforward preparation of butternut squash by peeling, deseeding, and dicing the squash into 1-inch cubes. These cubes are placed inside a 6-quart Instant Pot with 1 cup of water and cooked on high pressure for 3 minutes to retain shape or 4 minutes for softer, easier mashing. After pressure releases quickly, the squash is transferred to a bowl, seasoned with kosher salt, and optionally mashed or used cubed as desired.

This pressure-cooker method significantly reduces cooking time compared to stovetop or oven roasting, while producing tender pieces suitable for mashing or as a side ingredient. Adding butter or other flavorings after cooking can enhance richness and taste.

Ingredients

Servings
  • 1 pound butternut squash about 6 cups, cut into 1-inch cubes
  • 1 cup water
  • 1 teaspoon kosher salt

Instructions

  1. Wash the outside of the squash well and trim the peel from the outside. Scoop out the seeds and cut into 1 inch cubes.
  2. Place the cubes into the insert of a 6-quart Instant Pot with 1 cup of water. Set the Instant Pot pressure to HIGH and set time for 3 minutes if you want your squash to hold it's shape, or 4 minutes to make it even softer easier to mash.
  3. When time is up, quick release and carefully remove the lid. Transfer the squash to a bowl, season with kosher salt and mash with a fork or a potato masher and season with butter or other flavorings if you like. Or, keep cubed and use in other recipes as suggested above.
