How to Cook Lobster Tail

Ingredients

  • 16 ounces lobster tails thawed (four 4-ounce tails)
  • 4 tablespoons butter unsalted
  • 2 cloves garlic peeled and crushed
  • 1 tablespoon lemon juice
  • ½ teaspoon parsley dried
  • ghee for serving, or clarified butter
  • lemon for serving, wedges

Instructions

  1. Ensure the oven rack is the second from the top position. You want the baking sheet to sit about 6 inches from the top heating element. Turn the oven to broil on high to preheat (about 500 degrees F).
  2. Using a sharp pair of scissors or kitchen shears, cut the top side of the lobster tail. Start at the open end and cut down to where the flippers start. (Do not cut through the flippers.) Carefully pull open the shell, loosen the meat from the inside, and gently pull the meat up to rest on top of the shell. Place the tails on a baking sheet and set aside.
  3. To a small saucepan, add butter and melt over medium-low heat. Add the crushed garlic cloves, lemon juice, and dried parsley and mix to combine. Brush the garlic butter all over the lobster tails.
  4. Broil for about 4 minutes until the lobster meat is opaque and reaches 135-140 degrees F. (Typically, 1 minute per ounce of lobster should give you the proper internal temperature.)
  5. Remove from the oven and serve warm with melted ghee or clarified butter and lemon wedges for squeezing.

Notes

  • Nutritional information includes 1 tablespoon of garlic butter mixture per tail.
  • The garlic butter is optional but adds a nice flavor to the finished lobster. You can also serve any extra garlic butter on the side for dipping.
