How to Cook Perfect Lentils

Ingredients

  • 8 ounces lentils dried
  • 32 ounces chicken stock
  • 1/2 cup onion chopped
  • 1 cup carrot diced
  • 1/2 cup celery diced
  • 2 tablespoons butter
  • 2 bay leaves
  • black pepper to taste, ground
  • salt to taste

Instructions

  1. Finely chop onion, carrots, and celery.
  2. Melt butter in a medium-sized pot.
  3. Add the vegetables to the pot and sauté until lightly browned.
  4. Add bay leaves, salt, and pepper.
  5. Add chicken stock and lentils.
  6. Cook on medium-low heat until the lentils are done, about 20 to 25 minutes.

  • The key to perfect lentils is watching their texture carefully during cooking. Different varieties require different cooking times, and even the same type can vary based on age and source.
