HOW TO COOK ZUCCHINI ON THE STOVE

Fresh zucchini is cooked on the stovetop with onion, garlic, butter, and vegetable oil until tender but still holds its shape. The simple seasoning of salt and black pepper enhances the natural mild flavor of the zucchini, making it a straightforward side dish option. This method keeps the zucchini from becoming mushy, while softening the onions to add a subtle sweetness to the overall texture.

Description

HOW TO COOK ZUCCHINI ON THE STOVE uses medium slices of zucchini combined with roughly chopped onions, cooked together in a mix of vegetable oil and butter. The cooking process softens the zucchini disks and blends the savory notes of onion and garlic. The butter adds richness, while the vegetable oil helps cook the vegetables evenly without burning. Seasoning with salt and black pepper finishes the dish, highlighting the natural flavors without overpowering them.

The texture should be tender but still firm enough to hold its shape, providing a nicely cooked vegetable side. The garlic adds a mild aromatic element, gently infusing the squash during cooking. The dish is served hot and can be adjusted with salt and pepper to taste at the table.

This straightforward approach to sautéing zucchini pairs well with many main courses and is useful when a simple, lightly cooked vegetable is desired. It relies on fresh ingredients and basic seasoning to complement rather than mask the zucchini.

Ingredients

Servings
  • 2 zucchini medium size
  • 1 onion small
  • 1 tablespoon vegetable oil
  • 1 teaspoon butter unsalted
  • 1 teaspoon garlic minced
  • salt
  • black pepper

Instructions

  1. Cut the zucchini into disks that are about ½ inch thick. If the disks are larger than mouth size, then cut them into quarters.
  2. Give the onion a rough chop.
  3. Heat the vegetable oil and butter in a large skillet on medium heat on the stovetop until the butter is melted and the oil/butter starts to glisten.
  4. Add the zucchini, onion and garlic to the oil and cook until the squash becomes soft enough for your tastes (for me - that is about 5-6 minutes).
  5. Add salt and pepper to taste - serve hot and with salt and pepper offered on the table.

Notes

  • Use medium-sized zucchini for even cooking and manageable slices.
  • Adjust cooking time to your preferred level of softness.
  • Serve immediately to maintain texture and flavor.
