How to Cut Broccoli

This guide explains how to cut a whole broccoli head into florets with long stems by slicing at the base of each floret where it meets the main stem. It includes trimming the main stem and dividing the head into halves or quarters for more manageable pieces. The method preserves the stalk and leaf portions attached to florets for versatile cooking uses and presentation.

Description

To cut broccoli, start by trimming off about two inches from the main stem to create a stable base. Then stand the broccoli upright and slice downward where each floret joins the main stem, producing pieces with a longer stem attached and a slice of the thicker central stalk. Continue around the head until all florets are separated. Depending on size, slice the broccoli head into halves or quarters to reduce size further.

This cutting technique yields broccoli pieces with stems that aid in cooking evenly and provide added texture. Florets retain their shape and are easy to cook in various methods such as steaming, roasting, or stir-frying.

Cut broccoli can be stored in an airtight container for 3–4 days, making it easy to prepare ahead. For longer storage, freezing is recommended after spreading florets on a baking sheet to freeze solid, then transferring them to freezer bags for up to 10 months.

Ingredients

  • 1 broccoli head

Instructions

  1. Holding the head of the broccoli on its side, remove about two inches of the stem
  2. Stand the head of broccoli up on its stem. At the base of each floret, where the floret stem meets the main stem, make a cut downwards at the stem’s intersection. This will give you a floret with a long stem that includes a slice of the main stem.
  3. Continue this until you reach the top of the head of broccoli and slice it in half or quarters depending on the size.
