How to Cut Broccoli

This guide shows how to prepare broccoli by cutting it into manageable florets for cooking or raw eating. It involves trimming the crown and breaking the stem into smaller pieces, giving you clean, even florets for any recipe or snacking. The method keeps stem pieces suitable for various uses, maximizing the vegetable's value.

Description

How to Cut Broccoli explains the process starting with cutting the florets from the crown while leaving some stem to keep the structure intact. Larger florets are halved and further divided into smaller pieces by cutting and pulling apart the stems carefully. Finally, the florets are rinsed and dried to prepare them for immediate use or cooking.

The texture of the broccoli florets remains firm yet tender after this cutting method, making them ideal for steaming, stir-frying, or eating raw in salads. The technique also separates stem pieces that can be cooked or saved for soups.

This preparation is straightforward and designed to produce consistent broccoli pieces that cook evenly or can be presented attractively in dishes. It works well for home cooks wanting control over broccoli size and texture.

Cut broccoli can be stored in an airtight container in the refrigerator for up to 5 days, maintaining its freshness and crunch.

Ingredients

Servings
  • 1 head broccoli

Instructions

  1. Hold the broccoli with the stem facing up on a cutting board and use your knife to remove the florets from the crown, leaving about 1 inch of stem on each piece.
  2. When you get to the center of the crown, place the stem flat on the cutting board and cut down to separate the large bunch of florets from the thick stem.
  3. Hold a larger floret with the stem facing up on the cutting board and slice vertically into the stem about 1" inch.
  4. Use your hands to pull apart the two florets.
  5. To make smaller florets, continue at this point. Use your knife to cut the stem off of the floret close to the base where the buds start. Set stem aside.
  6. Use your knife to slice just a little big through the base of the small floret.
  7. Pull small floret apart into two pieces.
  8. Place the florets in a colander and rinse. Shake dry. You're now ready to eat it raw or use it to cook with!
