How to Cut Cabbage

This guide explains how to cut a whole head of cabbage into wedges, thin slices for slaws or sautés, and chopped pieces for stir fries or soups. It provides clear step-by-step instructions on removing the core and achieving uniform cuts appropriate for various recipes. The technique is simple and practical for home cooks using a chef’s knife and cutting board.

Description

To prepare cabbage, outer leaves that are damaged or discolored are removed before rinsing and drying the head. The cabbage is then halved vertically through the core and further quartered, creating wedges. For dishes like roasting or searing, these wedges may be trimmed further into thinner slices. For shredded cabbage used in slaws or sautés, the core is removed by cutting diagonally along it, and the wedge is thinly sliced crosswise. For chopped cabbage suitable for stir fries or soups, wedges are sliced lengthwise and then crosswise into roughly 1-inch chunks forming a grid, allowing the leaves to separate.

This method ensures even pieces adapted to the texture and cooking time needed in different recipes. The approach is straightforward and uses basic kitchen tools, making it accessible for any kitchen.

  • 1 head cabbage

Instructions

  1. Remove any outer leaves from the cabbage that are tough, discolored, or wilted. Rinse the cabbage and pat it dry. Place on a cutting board.
  2. Locate the stem or core at the bottom of the cabbage where the leaves join together. Use a sharp chef's knife to slice the cabbage in half vertically through the core. Cut each half in half vertically through the core to form four wedges.
  3. To cut thinner wedges for roasting or searing, continue to cut the cabbage wedges vertically through the core until they reach your desired thickness.
  4. To cut shredded cabbage for slaws or sautés, place one cabbage wedge cut side down on your cutting board. Cut diagonally along the core to remove it from the wedge. Working down from the pointy tip to the core end, thinly slice the cabbage crosswise. Repeat with the remaining wedges.
  5. To cut chopped cabbage for a stir fry or soup, cut each wedge into 1-inch slices lengthwise, then cut it into 1-inch slices crosswise to form a grid. The leaves will separate into squares.
